Self-Serve Sushi Spot Coming to New Development in Lafayette

The crown jewel of a new mixed-use development in Lafayette will be a self-serve sushi spot called Fishbox Sushi. Located in a corner unit in the front of the newly opened The Waters at Settlers Trace, Fishbox Sushi allows customers to walk in, grab a takeout box, and fill that box with traditional pieces of sushi, including rolls, tofu pockets, and nigiri. Customers can then pay for their box of sushi based on weight. The official website for the restaurant says every item is made fresh daily with quality ingredients. The Waters at Settlers Trace held a grand opening celebration earlier this year. The apartment development features a row of commercial spaces near the road. Fishbox Sushi will be located in a corner unit that includes a large outdoor patio, which is an exclusive feature in this development.
