In addition to planning a Baton Rouge location for later this year, Vicious Biscuit franchisees Zach Trujillo and Chris Miller are also planning a location of the popular brunch chain for Gonzales in Ascension Parish. Located at 333 Saint Christopher St., the Gonzales location will be in Heritage Crossing, the city’s fast-growing mixed-use development. According to reports, Miller and Trujillo have plans to aggressively expand the Vicious Biscuit presence in the Great Baton Rouge area with multiple new locations opening through 2025.

Viscous Biscuit was founded in South Carolina in 2018, and it became popular for its indulgent biscuit sandwiches. According to a report in Franchise Times, founders George McLaughlin and Michael Greeley waited until they had a proven model before pursuing franchising plans. The company currently has locations or planned locations in the Carolinas, Ohio, Mississippi, Alabama, Florida, Louisiana, Indiana and Utah.
