Known for attracting guests from outside the state and even outside the country, The Cajun Table in Lafayette is planning to open a drive-thru spot for its popular crawfish and seafood boils. Co-owner Lauren Suire recently told What Now New Orleans that the new drive-thru location will let the restaurant meet the high demand for its boils from locals and visitors alike.
“We’ve had people from New Zealand, Australia, France… I mean everywhere,” she said. “We just feel so proud and happy to be able to represent the Cajun culture, and for them to connect to it.”
The new location at 6974 Johnston St. in Lafayette will feature crawfish boils during the season. It will also have shrimp boils. Suire said she and her co-owner husband, Sean Suire, are considering blue claw crab boils after crawfish season. They are also open to other options based on public feedback.
With Sean Suire being a fourth-generation crawfish farmer from Vermilion Parish, Lauren said the upcoming boil spot will allow The Cajun Table to better meet its goal of sharing Louisiana crawfish with as many people as possible.
“We live on crawfish ponds, and we just wanted to bring the experience of being a Cajun,” she said. “The Cajun Table isn’t just about the food. It’s also about connecting to the feeling of being around Cajun family and friends. I want people to feel the warmth, too.”
