Over the past few years, Willie’s Chicken Shack has become a French Quarter icon with a combination of fried chicken and daiquiris that becomes irresistible after a certain hour in the evening. But now, it appears Willie is branching out with new restaurant concepts and the latest one in the works is Willie’s Gumbo Kitchen, which is set to open at 637 Canal St. According to permit filings with the City of New Orleans, the new concept will be taking the place of the former NOLA Waffle dessert shop. Aaron Motwani, who owns Willie’s Chicken Shack, has been behind both concepts at this location. An opening date has been set for the end of January.

In July, What Now New Orleans reported on the first spinoff concept from Motwani’s Willie’s Chicken Shack brand. Dubbed Willie’s Boil House, the seafood restaurant recently opened its doors at 336 Decatur St. Meanwhile, Willie’s Chicken Shack is currently planning a nationwide expansion, and What Now Miami reported in July that a location was coming to that Florida city.
