With three hospitality operations already under his belt, Monroe native Cory Bahr is preparing to open a high-end sushi restaurant in the city. Located across from Bahr’s Parish Restaurant at 317 North 2nd Street, Sushi Koko is designed to resemble a restaurant in the Ginza district of Tokyo, which is known as a Mecca for sushi. The menu is being designed with a Michelin-starred chef from Japan, and it will feature fresh fish flown in from Japan, according to Stuffed & Busted. In addition to Parish, Bahr also owns Standard Coffee Co. and Heritage Catering in Monroe. He was named Food & Wine’s “People’s Best New Chef” in America in 2015, and is a Culinary Ambassador for Louisiana.
