Known for her wide range of sourdough baked goods, and her sourdough cookies in particular, Chelsea Mitchell is preparing to put down permanent roots for her Wild Rise Sourdough Co. bakery. The Ascension Parish bakery had been selling sourdough breads, cookies, and other baked goods in the recently opened Chatagnier Community Market. Parish regulations forced Michell to transition her operation from a cottage industry to a commercial kitchen, and fortunately, a suite adjacent to the market opened up at 14210 Airline Hwy. in Gonzales. Wild Rise is preparing to officially kick off its operations there.

While the upcoming location won’t have public hours of operation, customers can purchase the bakery’s sourdough goods through an online portal and pick up their orders at the Chatagnier market. The market will also continue to sell Wild Rise goods for walk-in customers. Mitchell recently told What Now New Orleans that she is waiting on approvals from the parish to announce an opening date
