New York will be getting a new restaurant for patrons to enjoy. The owners behind Hart’s, Cervo’s, and the Fly are bringing a new concept to the Lower Eastside, having recently signed a lease for the former home of Sally Can Wait, a cocktail bar on 252 Broome Street.
Nialls Fallon is developing the new concept with his existing business partners, Nick Perkins and Leah Campbell.
The group has a well-documented history of establishing successful restaurant concepts, and the development from Fallon and his partners is shaping up to be the next one on the list.
Fallon shared with What Now New York that the concept for the restaurant is yet to be determined. However, it will be the sister restaurant to an existing concept, Cervo. Since this is the case, future patrons can expect a trendy, full-service restaurant.
Cervo’s chef Aaron Crowder and wine director Taylor will also be a part of the business partnership to develop the menu and drink options for the space.
In a New York Times interview, Fallon described the type of vibe he hopes to have at the restaurants he owns.
“We want our places to feel like a party when you walk in the door, even if it’s 5:30 and you’re the only one in the restaurant,” Fallon said.
The new restaurant will be the fourth addition to the group’s collective portfolio. Prior to this development, Fallon, Perkins, and Campbell opened The Fly, a wine bar in Brooklyn. The quaint eatery offers Mediterranean-style cuisine with a vast array of wines.
