Watch out! The Sushi Lab is experimenting with some very dangerous flavor combinations. Get too close and you might not ever be able to enjoy boring, average sushi again.

If you haven’t heard, Sushi Lab is one of the premiere sushi establishments in this city. An innovative concept that offers a modern and unique take on traditional Japanese cuisine, Sushi Lab takes inspiration from countries across the world, including France and Italy. As their website states, “Sushi Lab offers dining options with the highest quality of sourced items that bring together subtle and robust flavors.”

Owned by father-and-son team Hank Freid and Brandon Freid, Sushi Lab is found hidden on the rooftop of the Sanctuary Hotel (which is also owned by the Freids). Featuring omakase style chef’s choice sushi, Sushi Lab is an experiment of new flavor combinations that cannot be found elsewhere.

Now, the team behind Sushi Lab is gearing up to expand the concept beyond the Sanctuary Hotel. The second Sushi Lab is currently scheduled to open up on 320 East 11th Street, taking over a building that had been vacant for years. A small, intimate affair, the new location will only be able to seat a maximum of 12 patrons at one time. For the kind of personalized omakase experience that Sushi Lab offers though, the new location is the perfect size for fostering a sense of exclusivity and privacy.

Once open, the new Sushi lab will operate daily from 11AM to Midnight. The opening has been highly anticipated by Sushi Lab lovers, and fans are strongly encouraged to get a reservation if they want to try out the latest location.
