Third Falcon is about to land in Brooklyn. The new restaurant is having a soft opening on August 30 and 31. The official opening to the public will be on September 6 according to a post on Third Falcon’s Instagram page.

In an emailed newsletter from Third Falcon, the restaurant is described as focusing on the culinary traditions of Northern France. The dishes are market and seafood inspired, and an extensive wine menu will complement the offerings.

The dinner menu includes oysters, yellowfish, Montauk shrimp, scallops and cote de veau. The dessert menu features sticky toffee pudding, ice cream and a hybrid dish that is a combination of a creme brulee and a rice pudding.

Chef Cali Faulkner is behind Third Falcon. She has developed her culinary skills at Eleven Madison Park, The Modern, Crown Shy and Oxalis before launching Third Falcon as her first independent venture.

Eater NY reports that Third Falcon plans to source ingredients from Long Island farms. Seating inside can accommodate 40 guests.
