A routine health inspection was conducted by the Orange County health department on October 15, 2025, in Taqueria Guerrero. According to the health inspection report, the Mexican restaurant was cited for major violations like the presence of cockroaches and poor sanitation.

The health inspection report noted several violations during the routine inspection. They include:

  • An employee washing their hands but not drying them before beginning food preparation.
  • No hand soap was available in the dispenser at the cook’s line. Hand soap must be supplied at all handwash sinks at all times.
  • According to the report, several dead and partially dead cockroaches were observed on sticky traps in multiple areas, including on the floor under the grill across from the steam table in the kitchen, behind the glass two-door beverage/flan cooler, and behind the glass one-door cooler located under the TV, the report said.
  • Two live adult cockroaches and one live nymph were observed on the floor near boxes of empty bottles, located between the upright glass one-door beverage cooler and the upright freezer, as stated in the report.
  • Several food containers were observed uncovered in the upright coolers and in the reach-in compartment of the prep cooler.
  • The report mentioned that the restaurant must remove the accumulation of old food debris between and around the cooking equipment, on the door gaskets of the upright coolers and freezer, and inside the microwave.

  • A large gap was observed along the bottom of the back-gated door while the main door was left propped open. According to the report, the restaurant was asked to seal the holes and gaps in the ceiling tiles above the TV, above the glass two-door upright cooler, and above the cash register and horchata dispenser to prevent the entry and harborage of vermin, the report said.
  • The report states that the gap between the wall and base cover tiles behind the grill, across from the cook’s handwash sink, and across from the upright coolers needs to be sealed.
