The Orange County Health Care Agency conducted routine food safety inspections across the area on December 19. Among them, Bun Vit Thanh Da was cited for multiple health code violations, including the accumulation of dust and grime and improper storage.

Bun Vit Thanh Da is a Vietnamese restaurant that serves a variety of noodle soups. According to the official report, the restaurant was cited for several violations of the food safety regulations. The violations included:
- The report said an employee was seen picking up a plastic bag from the floor and preparing food without discarding gloves or washing hands.
- An employee was observed washing hands at a food prep sink, as there was no available hand sink.
- There was no soap in the dispensers at the employee restroom and even at the hand sink near the ice machine.
- Food items, including rice and mung bean noodles, were stored under TPHC without proper expiration labeling. The person in charge said the food items had been out of temperature control for less than four hours.
- The report noted that many live cockroaches were on an electrical outlet and wall behind the two-door upright cooler. There were also multiple dead cockroaches on the floor in the same area.
- Heavy buildup of grime, grease, old food debris, and dust on the interiors of coolers was observed. They were also seen on freezers, cooking equipment, including the stove, oven, and microwave, and on sink drainboards.
- Utensils and serving bowls were stored on an exterior rack, according to the report.

- An Avantco oven was in use outside of the exhaust hood. The report pointed out that the unit must be relocated under the hood, and grease accumulation on hood filters must be removed.
- Multi-use wiping cloths were kept outside the sanitizer solution despite having the sanitizer bucket set up.
- The faucet of the three-compartment sink was leaking and required repair.
- There were rodent-proofing deficiencies as per the report. Some included gaps along base coves and walls near cooking equipment and the three-compartment sink.
- An air curtain was observed disconnected or in disrepair.
- There was wooden tile flooring behind the single-door beverage cooler at the kitchen entrance, according to the report.

Follow-up Inspection

According to the comments in the report, Bun Vit Thanh Da had its health permit suspended and was ordered to close immediately. The eatery is expected to address all the cited issues, particularly the cockroach infestation, to lift the suspension. Once the violations are corrected, the restaurant may request a reinspection from the health department.
