Jeremy Webb’s distillery, Webb’s Grainworks, will officially open at the end of summer at 7 Journey in Aliso Viejo, according to a Craigslist post seeking to fill the bar manager position.
The full-service restaurant and retail store will also serve as a full-production spirit and beer cellar where Webb will propagate craft whiskeys and brews made entirely from grain (and accented both in color and flavor by American White Oak barrels from the West Virginia Great Barrel Company).
Per the distillery’s website, “food at Webb’s is not an afterthought.” The incoming tavern will serve craveable sandwiches on house-made bread, hand-folded dumplings and noodle soups, as well as cured meats like bacon and pastrami that are salted, brined, and smoked right on the premises.
