Coffeeism Co., a new specialty coffee bar, is set to open in late summer or early fall in Downtown Palm Springs, social media posts show. The concept is taking over for the Olive A’ Sudden gourmet market at 110 E. Tahquitz Canyon Way, on the corner of Palm Canyon Drive.

Longtime hospitality professional Guillaume Galataud is working to transform the 830-square-foot unit in the historic Liebling Trust Building into a Scandinavian-inspired caffeine destination. It also features an outside patio space for customers to enjoy their drinks in the sunshine, maps show.

Galataud told What Now OC that the lease has been signed and he has secured nearly all necessary licenses and permits. A website is in the works and demolition began earlier this month. He expects to begin hiring closer to the opening date.

Coffeeism Co. will serve Intelligentsia’s full espresso and batch brew program, alongside ceremonial-grade organic matcha and teas from Kilogram. A curated selection of pastries, including gluten-free options, will be sourced from local chefs.

“We’re building Coffeeism Co. with intention — a space where locals and travelers alike can slow down, connect, and enjoy a thoughtfully crafted cup. Sip slow. Hustle hard. Stay caffeinated. Coffee is our medium, but the experience is everything,” he said.

Galataud has more than three decades of experience in hospitality, including managing the original launch of Bootlegger Tiki and serving as General Manager at SOPA at L’Horizon. He also held leadership roles at Ace Hotel and Swim Club and spent over a decade managing venues for the Monsieur Marcel restaurant group in Los Angeles. Coffeeism Co. marks his first solo project.
