Primecut Taqueria, a California-based taqueria specializing in mesquite-charcoal-grilled tacos and Mexican street food, is preparing to open a new location in Anaheim at 215 S. Anaheim Blvd.
The company’s third location will move into the former home of Pour Vida Tortillas & Taps, near the Muzeo Museum and Cultural Center, according to a recent liquor license application. Owner Ivan Maldonado tells What Now Orange County that the new location is expected to open at the end of February 2026. When the new Primecut Taqueria opens, customers can expect their signature tacos, burritos, quesadillas, tortas, mulitas, Mexican pizzas, and keto-friendly options, all made with premium or prime meats cooked over mesquite charcoal.
Primecut Taqueria first opened its doors in Huntington Beach, followed by a second location in Placentia. The brand emphasizes mesquite charcoal grilling, which creates a distinctive flavor by vaporizing fats, oils, sugars, and proteins back into the meat as it cooks. This method has become a cornerstone of the restaurant’s identity and a key reason for its loyal following.
The Anaheim location is expected to continue Primecut’s focus on high-quality meats and customizable menu items. Customers can add premium or prime meat upgrades to most dishes, including tacos, burritos, and quesadillas, or try specialty items like the Surf & Turf burrito with shrimp and arrachera. The menu also offers loaded potatoes, burrito bowls, salads, and nachos, providing a range of options for different tastes.
Primecut also offers on-site catering services, cooking tacos, quesitacos, mulitas, quesadillas, and vampiros over mesquite charcoal, highlighting the brand’s commitment to quality and live cooking experiences.
