Redshift Coffee Expanding to Rancho Santa Margarita

Redshift Coffee Roasters, a family-owned and operated coffee shop, is getting ready to open a new location in Rancho Santa Margarita at 22312-C El Paseo.

The company’s second location is planned for Plaza El Paseo and will join another restaurant, The Goldfinch, as the shopping center’s newest tenants, according to 926OC. Redshift filed plans with the County in late January and is currently awaiting approval. The ownership team tells What Now Orange County that they are pushing hard to open in Spring 2026, but couldn’t provide an exact opening date. They hope to open before summer if everything stays on track. Customers can expect the same house-roasted coffee, breakfast offerings, and welcoming cafe environment found at the original shop.

Redshift Coffee Roasters first opened in Lake Forest at 22851 Lake Forest Drive in Saddleback Court. The business is owned and operated by husband and wife Denis and Elizaveta, along with her brother, Vitaly Yakovlev. The family previously operated a coffee shop in Russia before relocating to the United States and launching the Orange County concept. Since opening, the shop has built a steady following in the community.

The company’s story began in Moscow in 2021 with a small to-go coffee shop before the family moved to the U.S. in 2022. After more than a year of planning, the Lake Forest location celebrated its grand opening in 2024. The team roasts its own coffee in-house and focuses on creating a comfortable space for customers to connect.

The menu features espresso-based drinks, drip coffee, and specialty beverages made with beans roasted on-site. Customers can also find breakfast items, including avocado toast, pastries, and light bites. The shop operates Monday through Friday from 6:30 a.m. to 5:00 p.m., and Saturday and Sunday from 7:00 a.m. to 5:00 p.m.

Plaza El Paseo will be an excellent landing space for Redshift Coffee Roasters, given its neighborhood setting and steady local traffic. The expansion keeps the business close to its Orange County roots while introducing the brand to a new community within Rancho Santa Margarita.
