The Merrit Island breakfast staple, Merrit Island Pancake House, is expanding to Melbourne. The new location is going to be opening on 2447 N Wickham Rd right off Lake Washington Road.
Owned and operated by Steven Mardis and Kelly, the first Merrit Island Pancake House opened in 2016 while the duo still had full-time jobs. Kelly worked as a full-time nurse Rockledge Regional and Steve worked in retail. According to their website, “he would start each day out at the restaurant prior to going to his regular job.”
The restaurant started as a weekends-only, but then moved to being open seven days a week with the overwhelming support of their patrons. The team behind Merrit Island Pancake House doesn’t take this support lightly as they also make an effort to give back to the same community that supported them by organizing multiple fundraisers and feeding the local community for free.
We are excited for breakfast to be served all-day every day and are looking forward to this addition to the Melbourne community.
