According to a recent report in Orlando Weekly, a new 30-seat establishment is soon coming to Fairbanks Ave.

“Bar Kada, the newest concept from Soseki’s Michael Collantes, will open next door to his Michelin-starred omakase house offering a selection of ancestral-method sakes, low-touch wines curated by sommelier Benjamin Coutts and seasonal small plates utilizing local ingredients,” the report states.

Readers unfamiliar with Mr. Collantes should note was featured on the first sushi-focused realty chef competition Morimoto’s Sushi Masters and as a co-host for Diaries of a Master Sushi Chef, a youtube channel with 2M+ subscribers, per his official website.

Until Bar Kada opens, eager readers can sample his work at Soseki (955 W Fairbanks Ave).
