Drawing on Space Coast inspiration, Rocket Diner 321 is planning to go brick-and-mortar after operating as a mobile unit.

According to a plan review filed with the Department of Business and Professional Regulation, the diner’s location will be 2927 W New Haven Ave, neighboring a Dollar General, Yianni’s Diner and the Area Rug Gallery.

What Now on Thursday spoke with co-owner Ryan Hagy, who shared details about the brand. Hagy reports that Rocket Diner 321 is an offshoot of a family business that has been operating for 30 years. Before the pandemic, they would travel to festivals, state and county fairs, concerts and the like. However, that came to a halt once the virus spread. Then, they began operating in a food truck to serve their dishes. Fast-forward to now – they’ve signed a lease on a physical location.

Hagy said that they are in the process of obtaining permits and hope to begin their build-out soon.

Expect to enjoy burgers, tacos, fresh-cut fries, burrito bowls, homemade ice cream and more once the concept is open. Currently, an opening date has not been set.
