Owner and Chef Bruno Fonseca will bring luxurious seven-course meals complete with a staffed sommelier for wine pairings. Chef Fonseca, who has 20 years of fine dining experience, draws on inspiration from his Brazilian roots and experience with American cuisine.
The Foreigner currently operates as a pop-up kitchen at The Heavy, a marketplace and event venue at 1152 Harmon Avenue. It’s permanent location will be 2816 Corrine Drive, in the Audubon Park neighborhood. March or early April is the hopeful opening date.
Chef Fonseca, in a phone interview Thursday, emphasized the rolling menu and fresh ingredients: “We change our menu every month, and we work closely with a few farms and producers here in town.”
The pop-up culinary experience seats a limited 10-person capacity. However, the permanent location will seat 20, and guests will sit at a counter or a chef’s table. A pre-ticketed structure, much like the current pop-up, is expected. When guests purchase tickets, they can list allergies or dietary concerns.
Chef Fonseca is partnering with restaurateurs Johnny and Jimmy Tung to bring The Foreigner home to a permanent location this spring.
