Instrumental Hospitality, run by Michael Babcock, Wayne Coats, Paul Waxman and Robert Cissel, is getting ready to open the doors to another Belly Kitchen & Bar restaurant at 3150 E. Ray Road in Gilbert, the site for the upcoming Epicenter at Agritopia.

The restaurant, whose first location opened in Phoenix at the end of 2020, provides both traditional and modern takes on Southeast Asian cuisine alongside craft cocktails. The atmosphere is meant to be laid back and warmly lit.

Those on the hunt for the best of the cocktail list should turn their eyes toward things like the Flower Sour comprised of bourbon, genever, hibiscus and red wine, or choose from their curated natural wine selection.

As for the food, the crispy spring rolls and Vietnamese pizzas are great options to share, and if you’re still hungry after that, a pork belly and clay pot might be right up your alley. Simmered in coconut juice and fish sauce, this gluten free option knows how to hit the spot.

Babcock and Coats, formerly of Welcome Hospitality, are additionally known for their popular Welcome Diner, which also has a focus on cooking from scratch with the finest ingredients around. Belly was their first concept under the Instrumental Hospitality name.

As of now, no official opening date has been set, but the Epicenter is expected sometime around March 2022
