Cielito to Open at the AC Hotel Scottsdale Old Town Rooftop

Cielito, a new rooftop bar and restaurant is set to charm at the new AC Hotel Scottsdale Old Town.

A partnership between PEG Companies and the Wayfaring Group, Cielito is scheduled to open in February 2026 at the property, located at 7117 E. 3rd Avenue.

The concept will serve as a day-to-night spot for both hotel guests and locals, offering a menu of elevated Northwest Mexican cuisine by the Wayfaring Group’s chef Shon Foster. The cocktail program by partner Alex Webb, features agave spirits, citrus, and seasonal ingredients. In a press release, Webb says he wants Cielito to be something fun and social with a few surprises. “Mostly, we just want the food and drinks to be good. If people come up and enjoy themselves, we’ve done our job.”

The food and drink will be paired with a spectacular view of Camelback Mountain and Scottsdale’s skyline — including sunset-forward seating and a lively pool deck.

The 3,100 square-foot space includes seating for 70, including a 14-seat bar and an extension out into the pool deck. The indoor-outdoor area featured natural textiles and neutral tones highlighted by vibrant colors and artwork inspired by desert skies and contemporary Mexican folk art. “Cielito is going to be the rooftop experience Old Town has been waiting for,” said Joe Madera, vice president of hospitality at PEG Companies. “It completes the hotel’s vision as a true
lifestyle destination, a space that feels elevated but welcoming, where guests and locals can
come together for great food, great drinks, and unbeatable views.”
