Hope’s Frybread plans to open at Jefferson House in downtown Peoria, Phoenix New Times reports. Owner Hope Peshlakai told What Now Phoenix that an opening date has not been set.
Hope and her husband, Aaron, grew up on the Navajo Reservation. They started the business in 2011 to raise money for a neighbor, then continued selling frybread at pop-ups and a roadside stand on Power Road.
In 2022, they opened their Mesa restaurant at 144 S. Mesa Drive, Suite E. The kitchen uses Hope’s grandmother’s recipe for frybread, a deep-fried bread served with sweet or savory toppings.
The Mesa menu includes Navajo tacos, burgers, and lamb and teriyaki chicken sandwiches made with frybread. Sweet options include honey and powdered sugar, Nutella and banana, and s’mores toppings.
The Peoria restaurant will join a development at 8310 W. Jefferson Street that is targeting a November 2026 opening. Jefferson House is a partnership between Banquet Hospitality Group, the team behind The Churchill, and the city of Peoria. Its kitchens and shops will surround a shared courtyard with covered seating for more than 300 people, a bar, a live music stage, and a splash pad.
