Over Easy Working on Two More Valley Sites

The popular brunch eatery is getting ready to open new locations in Dove Valley and Gilbert

Over Easy, a popular breakfast and brunch restaurant chain based in Arizona, is preparing to open two new locations, including sites in Dove Valley and Gilbert.

Previously, What Now Phoenix reported on the breakfast concept expanding throughout the Valley with new locations opening this year in Tempe, Queen Creek, Peoria, Goodyear, and Buckeye. Now it appears the company is working on two additional sites. The first will open in Dove Valley at 2965 W Dove Valley Road #401, according to a recently approved liquor license application. This new Over Easy will be part of a retail development that also includes Tropical Smoothie Cafe and YogaSix. The exact opening date is still unknown. Another location is planned for Gilbert’s new retail development, The Gilmore.

Construction has started on The Gilmore, a $225 million, 35-acre mixed-use development in south Gilbert that will feature more than a dozen restaurants. Located at the northwest corner of Val Vista and Germann roads, the project includes 300 luxury apartments, a 105-room hotel, and about 200,000 square feet of grocery, boutique restaurant, and retail space. Eateries signed to open there include Phantom Fox Brewery, Zaxby’s, and Rebel Wine Lounge, among others. A 64,000-square-foot Safeway will serve as the anchor tenant. The development will feature a Main Street-style entrance, covered walkways, outdoor seating, murals, and gathering spaces, with openings expected in late 2026.

When these two new locations open, customers can expect the same breakfast and brunch offerings Over Easy is known for. The menu includes dishes such as chicken and waffles, biscuits and gravy, huevos rancheros, and steak and eggs. The restaurant also serves daytime cocktails to complement the meals. Both locations aim to provide a consistent dining experience in line with Over Easy’s existing Valley sites. Additionally, the restaurants focus on using made-from-scratch ingredients to maintain quality and flavor.
