Phantom Fox Beer Co. Opening Second Site in Gilbert

Phantom Fox Beer Co., a craft brewery and restaurant located in downtown Mesa, is getting ready to open a new location in Gilbert at the northwest corner of Val Vista Drive and Germann Road, just off Loop 202.

The company’s second location was recently announced as one of the newest tenants joining The Gilmore, a 35-acre mixed-use development in the Phoenix suburb of Gilbert, according to a press release. More than 25 leases have been signed so far, including a 64,000-square-foot Safeway, as well as Better Buzz Coffee, Handel’s Ice Cream, Jersey Mike’s, Sweathouz, Outcast Doughnuts, Rebel Wine Lounge, Square 1 Food Hall, Nook Kitchen, Level 1 Arcade, Woof Gang Bakery, and Over Easy. Thompson Thrift, a full-service real estate company engaged in multifamily, mixed-use, industrial, and commercial projects, expects retailers to begin opening in the latter half of 2026

Phantom Fox Beer Co. opened in November 2023 in the historic brick building at 150 W Main Street, which previously housed Desert Eagle Brewing Co. Eric Cady and Trent Smith, the team behind Chupacabra Taproom in Mesa, founded the brewery. It was launched in collaboration with Goat and Ram, a mobile pizza kitchen co-founded by Dan and Morgan Medlan. Together, the group aimed to create a community-focused space offering quality craft beer and artisanal food in a relaxed setting.

The brewery offers a wide selection of craft beers, with more than 20 options on tap, including styles like West Coast IPA, Hazy IPA, Red IPA, and Pale Ale. The brewery features an in-house kitchen operated by Goat and Ram, serving a rotating menu of wood-fired pizzas and appetizers. Popular menu items include the Loaded Potato and Penni Popper pizzas. The venue hosts regular events, including trivia nights and live music, as well as weekly beer releases on “Freshest Friday.” Indoor and patio seating is available, creating a casual setting for guests to enjoy food, drinks, and entertainment.

Thompson Thrift designed The Gilmore to be a vibrant destination that fosters a true sense of place. A Main Street-style entrance will welcome visitors and provide seamless integration of the retail, dining, and 300 vertically integrated luxury apartment homes. Thoughtfully designed covered walkways, inviting common areas, murals by local artists, and lushly landscaped outdoor gathering spaces have been crafted to inspire connection and community. The first resident move-ins are set to begin in early 2027.
