A new chicken restaurant is gearing up to debut in Phoenix this year. Look out for Pollo Lukas at 4170 N. 35th Ave. off Highway 60. Earlier this month, the city issued the new business a permit to begin tenant improvements on the space, which will include brand new seating, counters, freezers, kitchen equipment, storage, and ADA restrooms.
Co-Owner David Acosta confirms with What Now Phoenix that Pollo Lukas is projected to open late this summer. It’s likely that development for this new restaurant has seen its fair share of delays, as its website notes a debut that was supposed to happen in November 2021.
The website also says that Pollo Lukas is “where charbroiled chicken meets mama in the kitchen.” Using Mexican-style cooking methods with a charcoal grill, Pollo Lukas promises simple recipes that make way for robust flavor. In addition to their chargrilled chicken, the menu will also include a selection of sides.
