Proof Bread, a highly regarded artisan bakery specializing in handcrafted sourdough and fresh-baked pastries, is getting ready to open a new location on the southwest corner of Higley and Ray Road.
The company’s fourth location is set to open within the Higley Common, which is currently under construction, according to East Valley Now. Proof Bread will join other tenants, including Taco Chelo, Playa Bowls, Zara Nail Bar, Pvolve, and Good Vets. These new businesses will open later this year in a development south of the Epicenter at Agritopia. Proof Bread has its headquarters in Mesa at 125 W. Main St, with additional locations in Phoenix at 3110 E. Shea Boulevard and Litchfield Park at 13331 W Indian School Road.
Higley Commons will boast a vibrant retail and dining scene and feature brand-new luxury apartments. These residences will showcase modern designs and high-end finishes alongside resort-style amenities, appealing to those who wish to live in a walkable, amenity-rich environment. Residents will enjoy direct access to various retail options, restaurants, and fitness facilities, all conveniently located near some of Gilbert’s most popular destinations. More tenants are anticipated to be announced in the coming months.
