Roll & Rise Bagels Preparing to Open First Storefront

Roll & Rise Bagels, a family-owned bagel business specializing in scratch-made sourdough bagels, is preparing to open its first permanent brick-and-mortar location in Gilbert at 2524 S. SanTan Village Parkway.

The new storefront will occupy the former Strawberry Cake Shop space at SanTan Pavilions, according to EastValleyNow. Husband-and-wife owners Matt and Katie Winterland started Roll & Rise in 2024 after nearly two decades in conventional careers. An opening date has not been announced yet. Customers can expect the company’s hand-rolled and boiled sourdough bagels, although the complete storefront menu has not been released.

Before opening its first permanent location, Roll & Rise has primarily sold its bagels at farmers’ markets throughout the Gilbert area, through local retail partners, and via special orders. The company currently partners with Honeybrook Farms, where fresh bagels are available several days each week. It also participates in the Heritage District Farmers Market in downtown Gilbert and the Gilbert Farmers Market at Chandler Gilbert Community College.

The company’s bagels are made using a three-day preparation process that starts with sourdough starter. The bagels are hand-rolled, refrigerated overnight, boiled, and then baked. According to the company, the dough is made with high-gluten flour, filtered water, local Arizona honey, and kosher salt, with organic ingredients used whenever possible.

Katie brings culinary training from New York City to the business, while Matt has a family connection to bagel making, as his relatives previously operated a bagel shop. Their approach combines Katie’s culinary training with Matt’s family tradition of making bagels.

Roll & Rise says it does not use seed oils in its bagels and uses flour without enrichments. The company’s current offerings are available through its farmers’ market appearances, retail partnerships, and special orders as it prepares for the Gilbert storefront. With the permanent location still in development, more details about the opening and full menu have yet to be announced.
