Scottsdale-based Square One Concepts is growing its restaurant portfolio with three upcoming openings in the Phoenix area. The hospitality group plans to debut Bistecca & Bones, a new Italian steakhouse brand, and a second Old Town Ski Lodge location, according to the Phoenix Business Journal.
Bistecca & Bones is an Italian chophouse positioned as a sister concept to Bourbon & Bones. Its first location is currently under construction at CityNorth in north Phoenix, north of Loop 101 and west of 56th Street, with an opening targeted for the first quarter of 2027.
The concept will pair steaks with Italian dishes, such as pasta and seafood. The restaurant will also lean into tableside presentation, including Caesar salad prepared at the table and a flaming Bistecca Fiorentina.
A second Bistecca & Bones is already in the works at The Sydney, a $100 million, 26-acre retail and entertainment development near 90th Street and Loop 101 on Salt River Pima-Maricopa Indian Community land.
That restaurant will span about 6,800 square feet in a two-story building. Upstairs, Square One will open the second Old Town Ski Lodge location, expanding the concept to about 2,500 square feet with a wraparound patio.
The first Old Town Ski Lodge operates upstairs at Wasted Grain, one of Square One’s nightlife concepts, located at 7295 E. Stetson Drive in Scottsdale.
For The Sydney location, Square One is planning a more immersive version of Ski Lodge. The design is expected to include gondolas and ski chairs converted into seating, along with a walk-in freezer transformed into a separate ice bar.
Square One expects to gain access to its space at The Sydney in summer 2027. Both Bistecca & Bones and Old Town Ski Lodge are expected to open there by late 2027 or early 2028.
