The Blue Corn Cafe & Bakery plans to open its fourth location in Avondale in mid-October, founder Chef Nick told What Now. The bakery announced the expansion on social media and plans to share the address in the coming weeks.
Chef Nick said customers from Avondale, Goodyear, Buckeye, and Tolleson already travel to the bakery’s locations in Glendale and Mesa. Opening in Avondale will also bring the business back to an area where it previously sold at farmers’ markets.
“We used to do farmers’ markets in the area, and we’re just looking forward to coming back and supporting a lot of our customers that are already in the area,” Chef Nick said.
Blue Corn’s Glendale locations are at 7015 N. 58th Ave. and 5746 W. Glendale Ave. Its Mesa cafe is at 19 W. Main St.
For Avondale, Chef Nick chose a space with a square layout that allows for more seating. He plans to decorate the interior with greenery and water features.
Customers can expect the bakery’s pastries, artisan sourdough, and locally roasted coffee, along with new menu additions. Chef Nick also plans to rotate the selection, continuing to prepare “food made from scratch, fresh out of the oven daily.”
The team plans to celebrate the opening with a ribbon-cutting ceremony and giveaways.
“It’ll be a nice, fun event,” Chef Nick said. “Lots of free giveaways, muffins, gift cards, prizes.”
Chef Nick is also considering further expansion. He has discussed potential locations in Surprise and received an offer for a space in downtown Phoenix.
