A new conveyor belt sushi restaurant is opening in Gresham, according to a recent building permit filed with the city. Akira Sushi is opening on 900 NW Eastman Pkwy, formerly home to a Massage Envy.

The upcoming sushi restaurant is owned by Luke Yu, who owns the other Akira Sushi restaurants scattered around the Portland area, including the Akira Sushi in Clackamas and Portland’s San Rafael Shopping Center. He also owns Luke’s Noodle House in Beaverton and is currently working on another restaurant in Salem.

Opening in Gresham was a natural expansion for Yu’s small empire of restaurants, opening on the outskirts of the Gresham Town Fair shopping plaza just down the street from City Hall. The new restaurant will also give Yu an opportunity to mix things up a little. In addition to the usual sushi, he will also devote a portion of his restaurant to hot foods, likening the design to Panda Express. “I really want to see how it works,” Yu says.

Yu says the restaurant may take around three or four months to open, just recently beginning its construction.
