From starting a local coffee cart, the owner is now opening her own brick-and-mortar in the suburb.
From Simply Coffee’s Instagram page, their new shop is coming to 455 NE Burnside Road in Gresham. This is taking over the Hope’s Cafe spot. Their opening date listed is sometime in January 2026.
“My goal is simple: to add a personal and elegant touch to your event – one cup (and one heart in your latte) at a time,” says a statement from owner Andra Stanescu on their website.
Originally from Italy, this has been Stanescu’s dream for the longest time, first opening as a cart in spring 2024. She specializes in catering coffee for private events like weddings, corporate gatherings and special celebrations. For the new shop, drinks served will include espressos, macchiatos, cappuccinos and matcha lattes.
Right now, the business is hiring for baristas, and from their social media progress is being made on the inside. Tables, the bar top, coffee machines and the kitchen look to be nearly finished.
The cafe is coming to the corner of NE Burnside Road and NE Kelly Avenue, just across the street from Gresham High School. Gaia’s Workshop and Crown Trophy of Gresham share the plaza with the shop.
