Owners of a Mexican food truck have big plans for next year.
Fabos Tacos is cooking up a new brick and mortar location at 12695 SW Crescent Street in Beaverton. The company currently operates a food cart in the city. Co-Owner Tyanna Rosas told What Now Portland there is no opening date yet.
The taco spot has gained recognition in recent years for their birria grilled cheese, chilaquiles and taquito cups. It operates next to Breakside Brewery at the food cart lot, where other trucks operate including Farmer and the Beast. The company first opened around September 2019.
The restaurant is next to the Patricia Reser Center for the Arts. Across the street are restaurants such as Mingo Italian, Milo Sushi and Siam Lotus Asian Kitchen & Bar. The Beaverton Central light rail station is also close to the building.
Locations also listed on their Instagram page are Vancouver and Portland. Future expansion projects have not been announced, and Beaverton is the main focus right now. In a recent video, co-owner Fabian Rosas explained the goal is to get the new location open by the beginning of 2026 “so it can be Beaverton’s new favorite spot to go.”
