Owners of a dessert pop-up shop are looking to find a permanent home following months of fundraising.
Fusion Shave Ice is coming to a new space in Kerns at 807 NE Couch Street. The company currently operates at pop-up events around the city. Co-owner Melissa Calotis told What Now Portland she is hoping to open by the end of January.
The business has been operating since 2023, serving desserts for every corner of metro Portland. Events the shave ice company has been a part of include the Beaverton Night Market and White Lotus Summer Market. The owners also serve at the 300 Level of the Moda Center, in the Veteran Memorial Coliseum for the Winterhawks and at Providence Park.
Their signature flavors range from white peach and guava to mango or orange. New flavors include raspberry, blueberry, passionfruit, kiwi and hibiscus. Toppings like vanilla ice cream jellies and flavored powder are optional.
The new shop will be at the same space as the No Q’ No Mexican restaurant, at the corner of NE 8th Avenue and NE Couch Street. This is close to Burnside Street, where most of the neighborhood’s bars and restaurants operate. Calotis said inside, there will also be a specialty cocktail bar, and they are also taste testing a few additional menu items.
Their initial announcement about expansion came in June in a social media post, saying “We’re ready to plant permanent roots with our first brick-and-mortar location right here in Portland.”
