According to a recent permit filing, Grana is set to open its brick-and-mortar location in October of this year at 2811 E Burnside St.
“Grana is set to debut on October 14th of this year. What started as a pandemic-born creative venture by couple Chris Flanagan and Maya Setton have flourished into a gastronomic treasure, channeling the essence of Naples to the Pacific Northwest,” Setton shared in a press release with What Now Portland.
“Grana will be open Wednesday through Sunday, serving their staple Pizza a Portafoglio for carry-out (no dine-in) from 11 am to 2 pm. Dinner will be traditional Neapolitan pies and small bites, served Wednesday through Sunday from 5 pm to 9 pm. Reservations are required.”
At Grana, the allure of wood-fired Neapolitan pizza beckons, delivering a taste of Italy’s rich culinary heritage with every savory bite. With a dedication to tradition and quality, Grana’s pizza a portafoglio (folded pizza) embodies the essence of Italian street food, inviting diners to savor a taste reminiscent of the bustling piazzas of Naples. They are also a family-owned and operated business.
At the heart of what sets Neapolitan pizza apart lies its cooking method—an age-old tradition of wood-fired baking that imparts a distinct flavor and texture. Neapolitan pizza dough could be considered a work of art in itself, crafted traditionally from just four fundamental ingredients: Italian “00” flour, water, sea salt, and yeast. The dough is skillfully kneaded and left to rise slowly, allowing the flavors to develop and the crust to attain its signature chewy yet airy texture. The final flourish comes with a sprinkling of fresh basil leaves and a drizzle of extra-virgin olive oil.
Beyond their signature pizza, Grana weaves an enchanting tapestry of modern Italian cuisine, curating lush grazing tables that invite exploration and indulgence. Their artistry extends to intimate dining experiences, such as wine-tasting events or weddings. Their current mobile setup ensures that the essence of Italy can be savored anywhere, bringing a touch of la dolce vita to every occasion.
Grana currently hosts multiple pop-up options regularly. Some of those pop-ups have been at the PSU Farmer’s Market, Portland Craft Beer Fest, and Montelupo Market.
