A new coffee shop with a twist on desserts is opening in the suburb soon.
The owner of Croffle Crew Paul Prantsevich has been taking to social media to announce the new cafe coming to 11840 SE 82nd Ave, Suite 3072 in Happy Valley. This is a new cafe combining waffles and croissants to be at the Clackamas Town Center mall. As of now, construction is being done on the inside.
Prantsevich said in a recent Instagram post he has been looking to acquire the space at the mall for months. The bar area seems to be installed, and the floors are being ripped up for work. Painting and design work is to be done in the future.
Along with the “croffles” he is calling the combination of croissants and waffles, there will be matcha served. The cafe will be going in on the south side of the mall across from Dave & Busters. California Pizza Kitchen also used to be in the space.
Croffle Crew was officially registered as of October 2024, according to the Oregon Business Registry. Prantsevich is now accepting applications to join the “crew” on social media. Future updates can be found on the Instagram page @crofflecrew.
