Proof Pizza and Biscuits Moving into Buckman Space

The second location from the Beaverton-based pizza shop is in the works.

A food cart serving Chicago-style pizza is moving into a larger location soon.

The owners of Proof Pizza recently applied for space at 932 SE Morrison Street in Buckman. The restaurant already has a location at the Breakside Beaverton beer garden. Right now, it is reported the pizza shop will first open as a late night service window the first week of September, then as a full-service restaurant in October.

Bridgetown Bites broke the news that the pizza shop will be opening as a restaurant and bar. This will be going in place of the Pepper Box Cafe that closed in 2023. Per the latest post from Proof Pizza, this is a 1,100-square-foot space set to open soon.

Their other location, at 12675 SW 1st Street in Beaverton is currently their only restaurant that operates as a food truck, serving Chicago-style pizza. Their new shop will be a larger space at the corner of SE Morrison Street and SE 10th Ave. The menu is expected to be similar or the same.

Right now, construction and installation of machines is happening inside the building. If all goes well, the business should be set for an early September opening.
