A new fine dining restaurant, Rosemary and Fox, is taking over The Jackalope Grill in downtown Bend, first reported by Central Oregon Daily News. The upcoming restaurant on 750 NW Lava Road is owned by Jackalope Grill’s executive chef Josh Podwils and his wife Kate Podwils.
According to The Source, the Podwils will acquire the keys to the restaurant on March 4 and open the doors on March 17, which falls on Chef Podwils’ birthday. Rosemary and Fox will exclusively serve dinner, but the owners will add a happy hour in April from 4 p.m. to 6 p.m.
Chef Podwils became executive chef at The Jackalope Grill in 2025, but his fingerprints are all over Bend’s dining scene. A Bend native, Podwils worked as executive chef at The Victorian Cafe and Brother Jon’s Alehouse for years. He was also part of the founding team at Oblivion Brewing Co.
Now starting his own restaurant alongside his wife, Podwils is cooking French-American food that emphasizes the quality of its ingredients, mostly sourced from the surrounding area. The restaurant will also serve wines from around the region.
As Rosemary and Fox prepare to take over the space, diners still have some time to say goodbye to The Jackalope Grill, which will hold its last service on Feb. 28.
