FlapJacks, a popular breakfast and lunch spot in Sacramento, was reported for several violations. Health inspectors reported, men’s restrooms did not have hand soap at the handwash sink. Employee drinks were found on prep tables. Some potentially hazardous foods were found at unsafe holding temperatures.
Mashed potatoes were found on the steam table at the cook’s line with temperatures between 110°F and 117°F, below the required hot holding temperature. Staff corrected the issue by reheating the mashed potatoes to 165°F on the stovetop before returning them to the steam table.
Inspectors found crumbs in an open batter container that an employee later scooped out. The report further noted that the meat slicer was not thoroughly cleaned and had meat residue along the blade and the blade housing.
The report pointed out that the tabletop can opener was found with built-up food residue, and the ice machine had mold-like residue. Raw eggs were found stored above ready-to-eat foods in the walk-in cooler, posing a risk of cross-contamination.
Raw eggs should always be stored below ready-to-eat items to ensure food safety, noted the inspectors. Inspectors noted oil buildup on the toaster at the cook’s line, indicating inadequate cleaning.
The health inspectors found warewash dish baskets stored on the floors. A soiled towel was found with no sanitation bucket available at the prep station. Inspectors noted the coffee station drain lines lacked an air gap, which is required to prevent backflow.
