Sushimono serves all-you-can-eat sushi along with other options and offers dine-in, takeaway, and delivery services. When health inspectors visited the facility on Wednesday, they found two major violations that pose an immediate threat to public health and several minor violations.

Violations Listed in the Official Report

The first major violation reported at the restaurant was in the case of the cooked shrimp, grilled chicken, and unagi, which were found to be kept at unsafe temperatures. The operators said these items had been left out for over an hour.

The other major violation was that the hand-wash station on the cook’s line was missing paper towels. Inspectors noted both were corrected during the visit.

Additionally, imitation crab salad was seen stored in an ice bath that was above the required temperature. Moreover, the report noted that the temperature inside the walk-in refrigerator, which had imitation crab salad and spicy tuna, was higher than the required 41°F threshold. The report also said the facility lacked a probe thermometer.

Improper storage practices were also noted, including the placement of raw chicken above ready-to-eat seafood and food boxes stored directly on the floor inside a freezer. These issues were to be resolved on the same day.

Cleanliness and maintenance issues, such as dust and sticky residue on shelves, soot on hood filters, and inspectors observed soiled mop water left standing in a bucket. The shared dumpster lids were seen left open at the time of inspection.

Inspectors found utensils in room-temperature water, which was not circulating, and a sanitizer bucket measured 0 ppm chlorine. Both of these were addressed during the inspection.

It was also noted that food Handler cards and the health permit were unavailable for review at the facility. These issues must be corrected within 30 days, the inspection report stated.

Schedule for Reinspection

Sushimono received the yellow card, which implies that it got a “Conditional Pass” in Wednesday’s inspection. It also means that the restaurant will face a reinspection within 24 to 72 hours. The restaurant will have to pay the additional fee for the reinspection.

The reinspection will check the status of compliance with the applicable sections of the California Health and Safety Code. The restaurant can regain its green card if no major violations are found during reinspection.
