Adalberto’s Mexican Food underwent a routine health inspection by the Sacramento health department on October 15. The inspection revealed several health code violations, including unlabeled chemical bottles and improperly stored or temperature-controlled foods.

According to the health inspection report, the violations of the health code were as follows:
- The report noted that the carnitas and birria consommé were stored at incorrect temperatures on the flat grill. The issue was corrected by using a double boiler for proper heating.
- Staff weren’t familiar with sanitizer test strips, so on-site training was provided.
- The report further mentioned that the shredded beef with peppers and onions was held at 126–135°F, below the required temperature. The item was reheated to 165°F or higher. Raw chicken and beef were also out of temperature in the walk-in cooler, which measured 48°F.
- Inspectors found a densely packed container of shredded beef in the walk-in cooler at 45–46°F, indicating improper cooling since the previous day.
- The report noted that an employee skipped the sanitizing step while washing a container. It was corrected by setting up proper sanitizer and re-cleaning the item, with staff training on correct procedures.
- The breakfast menu didn’t include the required advisory for undercooked eggs, a repeat violation. A handout was provided, and correction is required within 14 days.
- Inspectors found raw meats stored above ready-to-eat ham and cheese in the prep cooler, and packaged raw ground beef mixed with ham and shredded pork in the walk-in.
- The report mentioned that chemical bottles were stored on a shelf by the employee restroom without labels.
- Self-serve chips and salsa stations were missing sneeze guards.
- Syrup splatter was found under the front counter, on soda syrup lines and cases. Moreover, a monitoring trap on a shelf contained a few dead cockroaches, and minor residue was noted on the cooked foods walk-in fan covers.

Follow-Up Inspection
Adalberto’s Mexican Food received a yellow placard after the routine health inspection revealed several health code violations. The restaurant is expected to correct all the violations to receive a green placard. A follow-up inspection will occur within 24 to 72 hours.
