Journey to the Dumpling in Sacramento received a yellow placard in a recent health inspection. Several health code violations were documented by on-site inspectors during the inspection. According to the health report, these are the violations noted:

  • The California Food Manager Certificate at the restaurant has expired and needs to be renewed within 30 days.
  • Several potentially hazardous foods were not stored in proper holding temperatures. These include raw chicken (58°F), raw shrimp (56°F), cooked beef (58°F), cooked chicken (56–61°F), and cooked shrimp (58°F).
  • The employees did not follow proper cooling methods. Cooked beef was cooling in a deep pan inside the reach-in cooler.
  • Raw chicken was stored on top of raw shrimp under the drain board of the prep sink.
  • A mold-like substance was growing inside the nozzles of the soda machine.
  • Raw protein was stored over the ready-to-eat produce in the reach-in cooler.
  • Cases of raw chicken and raw pork were stored directly on the floor under shelving in the kitchen.
  • The report further noted that a bowl was used as a scoop in the prep coolers.
  • The hand sink by the soda machine had duct tape around the perimeter, which is not an approved method for repair.
  • The tongs were on the oven handles instead of in an approved manner.
  • The monitoring thermometers inside the reach-in coolers on the cook’s line were inoperable.
  • The back door was open at the start of the inspection.
