During a routine health inspection, Dim Dim Food was cited for multiple health code violations. According to the inspection report, the restaurant was issued a yellow placard on October 23. The main violations reported were improper food handling practices, including storage of food items at the wrong temperature, using unclean equipment, and a lack of thermometers and sanitizer test strips.

Dim Dim Food is a popular dim sum restaurant in Sacramento, known for traditional dishes made with fresh ingredients, including steamed buns, meat dumplings, rice noodles, and hot porridge. The official health inspection report mentioned the following violations:
- At the beginning of the inspection report, the officials mentioned that the restaurant stored hot food at improper temperatures, such as rice porridge, which was found at 105°F in the soup well.
- Other hot foods in the metal steamer were also measured at 105°F, and tofu wraps were 112°F in the small hot holding unit. Additionally, various rice noodle rolls were also kept at room temperature.
- According to the inspection report, the officials corrected this violation on-site; the rice porridge and other hot food items, like rice noodle rolls and tofu, were discarded due to improper reheating and were not stored on time as a public health control (TPHC).
- The report also noted employees using personal drinking containers and wiping hands with a towel during food preparation.
- The employees were instructed to wash their hands thoroughly only at the handwash sink, discontinue the use of hip towels, and avoid eating or drinking near the food preparation area.
- The report also noted that shrimp were thawing at room temperature on the floor, which was kept under the ware-wash sink, and raw ground meat was stored above whole cuts and ready-to-eat foods in the retail refrigerator. Along with that, various food items were also stored on the floor in the walk-in cooler. The officials advised the restaurant operator to store all food and containers at least 6 inches off the floor and in a safe place to prevent contamination.
- Food residue on surfaces and handles, and the use of cardboard as liners and containers. Sanitizer test strips and a probe thermometer were also missing during the inspection.

Follow-up Inspection

The Sacramento County Department will conduct a reinspection at Dim Dim Food within 24-72 hours. The reinspection is to evaluate the compliance of the restaurant. If the restaurant fails to pass the reinspection, it may lead to suspension of the permit to operate. The restaurant must correct all the violations and follow the corrective measures mentioned in the inspection report in order to pass the reinspection and receive a green card.
The restaurant is required to pay additional fees for the reinspection, and until then, the given yellow placard should remain on display.
