Sacramento County Environmental Management Department conducted a routine inspection at La Terraza on October 14. The restaurant was cited for several violations, including the presence of six fruit flies and improper food holding and cooling temperatures.

La Terraza
La Terraza, a Mexican restaurant, received several health code citations during the inspection. According to the health inspection report, they are as follows:

- Where: 1027 2nd St, Sacramento, CA 95814
- The report mentioned that two of three kitchen handwashing sinks lacked paper towels, the bar sink was missing soap and paper towels, and one of two soap dispensers in the women’s restroom wasn’t working.
- The report noted a major violation, shredded beef was held at 120°F on a steam table, which requires maintaining its temperature above 135°F. The item was discarded.
- Raw chicken and shrimp were observed at 44°F in the cold drawer near the fryer, cooked beans, diced chicken, and diced tomatoes were observed at 44 to 45°F in cold top insert pans, and shredded cheese was observed at 47°F in the cold top insert pan.
- Cooked chicken was improperly cooled at 80–84°F in a tightly wrapped pan for two hours, according to the report. The item was moved to a blast chiller and cooled to 64°F within 15 minutes.
- Old meat debris on the meat slicer blade guard was mentioned in the report, along with grime, which was observed inside the bar soda guns.
- The kitchen dish machine was measured at 109°F and the bar dish machine at 104°F, both of which were below the required minimum.
- The report notes about six fruit flies in the bar area. The restaurant was given 7 days to correct the violation.
- Uncovered containers of chips were seen stored below the cook’s line paper towel dispenser.
- Unlabeled chemical spray bottles were found under the shelf next to the cooks’ line handwashing sink, the report mentioned.
- Debris and spider webs were observed under the bar equipment. Sticky bar mats were kept with glassware on top.
- Health inspectors observed unclean utensils in the bus tub and on a tortilla press near the prep table.

Follow-Up Inspection
The Sacramento Health Department issued a yellow placard to La Terraza. A reinspection will be conducted within 24 to 72 hours. The restaurant must correct all major violations to qualify for a green status.
