The Sacramento County Environmental Management Department cited two food facilities for health violations on September 9. Burgers and Brew and Roosters On The River were reported to have improper sanitation measures, unsafe food temperatures, and other violations.

Burgers and Brew

The Sacramento-based burger spot didn’t follow the standard temperatures of potentially hazardous foods. Sliced tomatoes measured between 51°F and 52°F in the prep top cooler. The deli turkey measured 53°F in the reach-in cooler.
The staff at Burgers and Brew was found washing dishes/equipment without using sanitizer. The facility’s paper towel dispenser at the kitchen’s hand sink was missing a cover. A can opener’s tooth was full of dust buildup at the burger joint. Thermometers to measure the temperature of the rinse cycle of the high-temperature dishwasher were unavailable.
The Sacramento food establishment lacked a valid California Food Manager Certificate. This was a repeat violation of Burgers and Brew, which must be corrected within 30 days.. The California Food Handler Card has expired, and it is now to be renewed within 30 days.
Burgers and Brew was using water bottles with unapproved screw-top lids stored on its prep table in the kitchen. The inspector ordered it corrected during the inspection.
An undercooked burger patty without full consumer advisory disclosure was found at the Sacramento establishment. The inspector instructed representatives of Burgers and Brew to correct the menus within two weeks.
Many unlabeled toxic chemical bottles were found throughout the burger place. Ice buildup was observed on the door of the walk-in freezer at Burgers and Brew, alongside grease accumulation on the kitchen’s ceiling. Cardboard was being used as a liner on the Sacramento facility’s kitchen floor.
Broken cold drawers, along with missing filters on exhaust hoods, were noted at Burgers and Brew. Its exhaust hood didn’t have filters during the inspection. The door of the men’s restroom was found open at the Sacramento food facility. The burger place didn’t have the previous inspection report on site.

Roosters On The River

Large pieces of carnitas in the steam table at Roosters On The River measured 92°F. A pan having fried potatoes, onions, and peppers on the grill were improperly held at 126°F to 128°F. The washing machine detergent was empty, and the sanitizer measured at 0 ppm Cl.
The food safety manager certificate and food handler cards were unavailable during the routine inspection. Residue was observed on the ice machine’s interior panel and the at edge of bar soda gun at Roosters On The River. These issues were asked to be corrected on the same day.
A consumer advisory on Roosters On The River’s menu was missing the disclosure statement and asterisk identifiers of undercooked items. Three rodent droppings were observed on the floor below the soda syrup cases under the beverage service station.
Beverage bottles were improperly placed on top of ice in the bar ice bin at the Mexican food establishment. Ice scoops were wrongly stored directly on top of the ice machine. The freezer walk-in light was not operable at Roosters On The River.
The monitoring thermometer was missing in the beverage prep cooler of the Sacramento eatery. Sanitizer with wiping cloths at the cook’s prep sink measured 50ppm Cl. Roosters On The River’s ice machine and beverage fountain drain lines extended into the floor sink below the beverage service station.

Follow-up Inspection
Based on the many new and repeat violations, Burgers and Brew and Roosters On The River received a yellow placard. Both these Sacramento food facilities can get a green placard if they clear their respective follow-up inspections. According to the inspection reports, a follow-up will take place within 24-72 hours at the eateries.
Health inspections are conducted regularly to ensure compliance with food safety codes. Negligence of the required parameters could result in yellow or even red placards for the food establishments.
