Sacramento County health officials conducted routine inspections on August 27. Palace Food Services and BAD Bakers were cited for multiple health code violations, including improper food temperature, cockroach infestations, and poor sanitation.

Palace Food Services, known for its authentic African dishes, was reported for not keeping paper towels and hand soap at the sink.

The following potentially hazardous foods were found stored at improper temperatures in the walk-in cooler: Egusi, Okra, Peanut Butter Stew, and Jollof Rice, all measured at 55°F. These items were discarded during the inspection.

The operator moved the remaining perishable foods into working refrigerators and freezers. Health inspectors observed an unclean countertop, a can opener, and built-up food residue on the mechanical teeth area.

The ice machine was unclean, and there was slimy residue located on the plastic ice chute. Several dead cockroaches were observed on the floors under the prep sink and near the 3-compartment sinks.

The report mentioned that there were no lids for ingredient containers, exposing food to potential contamination. Raw chicken was seen stored over beef, risking cross-contamination. The interior of the two-door refrigerator was found unclean, with visible food splatter and debris.

Inspectors found a spoon with heavy food buildup. The floors of the walk-in cooler showed signs of old liquid spills, while the fan guards were covered in dust and debris. Inspectors also noted mold-like residue inside the beer walk-in cooler.

Where: 8403 Elk Grove Blvd 100, Elk Grove, CA 95758

BAD Bakers, known for its glazed donuts, was cited for several health code violations. Health inspectors reported that one of two shift leads lacked knowledge on proper concentration of sanitizer at the 3-compartment sink for ware washing.

Lumpia, empanadas, hotdog buns, and ham/cheese dog buns held under Time as a Public Health Control (TPHC) were missing the required 4-hour discard time. According to the employee, the items had been prepared about 3 hours prior.

The inside of the panel of the ice machine had slime-like, black residue accumulation. Buckets of food were seen stored directly on the floor inside the walk-in cooler.

The report stated that the following areas needed deep cleaning and ongoing maintenance: floors beneath cabinets, storage racks, and equipment throughout the kitchen; fan guard and metal racks inside the walk-in cooler; hood filter, wall panel under the hood, and sides of the deep fryer; and the side panel of the front retail refrigerator.

The health inspectors noted that the posted health permit is not current and asked the restaurant to locate the recent health permit and post it within 7 days.

Follow-up Inspections

Both Palace Food Services and BAD Bakers received a yellow placard from the Sacramento health department for health code violations.

A reinspection is expected to be conducted within 24-72 hours in both restaurants. All the major violations must be corrected by the restaurants to receive a green placard.
