Two Sacramento Mexican Restaurants was Cited in Recent Health Inspections

Two Mexican restaurants in Sacramento received yellow placards for improper handwashing methods, incorrect food holding temperatures, and other violations.

The Sacramento County Environmental Management Department conducted routine inspections of local restaurants on September 17, during which Culichi Town and Casa Flores were issued yellow placards for food code violations.

Culichi Town

Culichi Town is known for menu items such as Marlin tacos, tuna sashimi, and shrimp cocktails. However, Culichi Town was reported for multiple violations of the California Health and Safety Code this Wednesday.

Paper towels were missing at the rear handwashing sink next to the walk-in cooler. The paper towel dispenser was found damaged at the facility.

The restaurant was reported for incorrect food holding temperatures. The tempura batter measured at 73°F with no temperature control method. Crab present at Culichi Town’s cook line measured 50°F, and shrimp on the cold top measured at 54°F. All of these violated the required range of at or below 41°F or at or above 135°F.

There was no chlorine present in the automatic dishwasher at the restaurant. Culichi Town’s tabletop can opener was dirty with residue buildup on the mechanical teeth and other components, as observed during the inspection.

Inspectors found scoops stored with handles inside food containers. Two food boxes were kept on the floor of the smaller walk-in cooler.

Culichi Town was next cited for excessive residue on the interior surface of the kitchen automatic dishwasher by the inspector. Oil and grease were seen under the fryer and cooking equipment at the facility. No test strips were available to check sanitizer levels in the kitchen and bar dishwashers.

The ambient temperature of the 2-door reach-in cooler at Culichi Town’s cook line measured at 50°F. Thermometers were missing inside several cooler units of the Sacramento restaurant. The tallow bin lid was left open at the facility. The health permit of Culichi Town was unavailable during the routine inspection.

Casa Flores

Casa Flores is a go-to spot for patrons wanting to relish Mexican cuisine in Sacramento. It was, however, cited for multiple major violations of the California Health and Safety Code yesterday.

Inspectors observed food items like chicken broth and cooked beef violated the required temperature limit of at or below 41°F or at or above 135°F. The cook at Casa Flores didn’t have adequate knowledge of food reheating temperatures. During the routine inspection, its food safety certification was found to have expired.

The men’s restroom at Casa Flores didn’t have hand soap at the hand sink. The battery-powered soap dispenser was out of order.

Many larger containers of chicken gravy were improperly cooling in the prep sink on top of the 3″ of ice. Casa Flores had 1 can of Gangi Supreme tomato puree on the dry food storage rack with a dented seam.

The facility was cited for black debris on a plastic deflector plate inside the ice machine. An old beverage syrup build-up was seen on a soda gun at the bar. Water at the restroom hand sinks was equipped with auto run faucets measuring 90°F to 95°F, not 100°F to 108°F.

The restaurant was observed to be storing raw chicken above the cheese and raw beef inside the walk-in refrigerator. Some unlabeled spray bottles containing degreasers were observed at Casa Flores’ mop sink.

Inspectors found a bag of onions placed on the floor. The facility was reported for boxes of cilantro and tomatoes stored on the floor in the walk-in refrigerator. A bin storing bulk flour was missing proper labels.

Old food debris was observed on the floor below the fryer and griddle, space beneath the griddles, and down the sides of the stove at Casa Flores. Some molcajete bowls in the kitchen were not easily cleanable. A light under the ventilation hood of the facility was inoperable.

Follow-Up Inspection

Culichi Town and Casa Flores can receive green placards if they pass the follow-up inspection, scheduled within the next 24 to 72 hours. For the same, they must rectify the violations as given in their respective inspection reports.

The Sacramento County Environmental Management Department conducts these inspections to help prevent foodborne illness. Non-compliance can result in yellow or red placards.
