An elevated Bay Area dim sum restaurant is setting the table in Folsom.
Palette Dim Sum & Lounge is preparing to open its first Sacramento-area location at 2770 East Bidwell St, Suite 600, in the Broadstone Marketplace. The restaurant will take over the former Saigon Alley Kitchen + Bar space, which shuttered late last year.
“Palette was born in San Francisco with a vision to reimagine Cantonese cuisine by honoring its heritage while elevating the experience through modern ingredients, refined design, and thoughtful hospitality,” the team told What Now Sacramento. “Bringing this new approach to dim sum and seafood to Folsom is about sharing our culture and growing alongside a new community.”
Known for elevating traditional Cantonese fare with a contemporary touch, Palette offers a polished, design-forward dining experience centered on handcrafted, made-to-order dim sum, premium roast meats, and live seafood pulled from on-site tanks.
The menu blends traditional recipes with modern technique, featuring upscale dishes such as lobster har gow, squid ink and truffle-infused xiao long bao, honey walnut prawns, and golden salted egg yolk. Expect staples like siu mai, veggie spring rolls, and fried rice dishes, as well as luxe additions such as Alaskan king crab and whole roasted Peking duck.

The Folsom outpost joins a growing portfolio from the Ng family, whose concepts include Palette Tea Garden in San Mateo, Palette Tea House in San Francisco, and Palette Tea Lounge in Las Vegas, as well as the acclaimed Koi Palace in Daly City and Dragon Beaux in San Francisco. The group also operates an existing Palette Dim Sum location in Tustin.
“We’re very excited to offer Folsom a new concept in modern, authentic dim sum,” said co-owner Kristi Ng. If all goes according to plan, Palette Dim Sum & Lounge will debut in the summer of 2026.
