An upscale Mexican restaurant in Folsom is preparing for a new chapter.
Cantina Pedregal—which launched in July 2024 as a collaboration between Patricio Wise and Cinthia Martinez of Nixtaco in Roseville and Clay Nutting and Brad Cecchi of Canon in East Sacramento—will soon transform into a second Nixtaco location.
“This restaurant has meant the world to us,” the Cantina Pedregal crew shared in a social media update. “We poured our hearts and souls into every detail, and we are deeply proud of what we created. Cantina Pedregal was bold, ambitious, and unique—a vision brought to life through the passion of our incredible team.”
Located in Suite 150 at 185 Placerville Rd, Cantina Pedregal has made a name for itself with its contemporary take on Northeastern Mexican cuisine, serving craft cocktails and standout dishes like grilled octopus and duck mole taquitos.
Nixtaco, on the other hand, is known for its casual yet artisanal approach to scratch-made Mexican fare. Debuting in June 2016, Food & Wine has named the eatery one of the best taco spots in the country, praising its mix of classic and creative tacos—think short rib barbacoa, chicharron, spicy shrimp, and vegan spicy tofu.
The new Folsom restaurant will largely mirror Nixtaco’s original menu, though Wise and Martinez plan to keep select fan-favorite dishes from Cantina Pedregal, including its popular carne asada. The larger kitchen space will also allow for new offerings tailored to the location.
“The idea is to bring a more casual, everyday-go-to concept to our community in Folsom, like we have accomplished in Roseville, that features Nixtaco’s award-winning cuisine,” Wise told What Now Sacramento.
Most of Cantina Pedregal’s team will remain on board, assisting at Nixtaco Roseville while the Folsom space transitions. Cantina Pedregal’s final day of service will be April 19, with plans to open Nixtaco Folsom by Cinco de Mayo.
