Cantina Pedregal is Coming to Folsom Pointe

Led by two Michelin-recognized chefs

Folsom Pointe has recently confirmed a new restaurant tenant after a previous plan for a micro food hall fell through. The new Mexican restaurant tenant, Cantina Pedregal, is led by two Michelin-recognized chefs and is anticipated to open early next year.

Located at Ste 150 in Folsom Pointe, Cantina Pedregal will take over the 4,400-square-foot space adjacent to Mikuni Japanese Restaurant & Sushi Bar. The restaurant will be led by two brilliant pairs: husband-and-wife combo Patricio Wise and Cinthia Martinez of Roseville’s Nixtaco, and Brad Cecchi and Clay Nutting of East Sacramento’s Canon, which was recognized in Michelin North America Inc.’s Bib Gourmand category for the first time last year.

“Brad and I complement each other – I am self-trained and learned by trying out new ideas until finding what I do best. Brad is professionally trained and his experience in the culinary and restaurant world brings a lot to the table. We’ve both been a part of the James Beard Foundation Chef Bootcamp for Policy and Change, which gives chefs an opportunity to train to be effective leaders for our industry, so we have a similar value system when it comes to our restaurants,” Patricio Wise, co-owner, told What Now Sacramento in an email.

Cantina Pedregal is a Mexican cantina specializing in northeastern Mexican cuisine focusing on various meat-driven dishes cooked under high temperature, shareable small plates, and family-style platters. The cantina will also contain a full bar with an exciting cocktail program.

“My wife and I grew up in Monterrey, Mexico where cantinas are casual places to spend time with friends and family, where people gather to talk, play games, get to know their neighbors. Drinks are always served along with traditional botanas and other small plates. The ambiance is always warm and convivial and that is the feeling that will carry over into Pedregal.” Wise said.

Given that the space is mostly a turnkey with existing equipment and minimum renovation needs, the owners anticipate the restaurant to open in mid-January, 2024.
