A distillery and tasting room in El Dorado Hills is adding a full-service restaurant and bar.
Dry Diggings Distillery has begun demolition and construction on the space at 5050 Robert J Mathews Parkway, a vision that has been years in the making.
“A bar and restaurant WILL be coming soon. Over twelve years of hard work and big dreams, and we’re finally doing the damn thing,” said an Instagram post.
The restaurant is expected to be called hills. Details about the specific menu are not known yet.
Dynamic Demolition and Deacon Construction are working on the project. The tasting room and distillery are expected to remain open during the buildout. Operating hours are 12 to 5 p.m. Wednesday through Sunday.
Dry Diggings Distillery began in 2012, eventually acquiring Amador Distillery, which now operates at the space as well. Founded out of a desire to “craft high-quality spirits inspired by the unique history and abundant agricultural resources of the region,” the distillery sources, ferments, distills, blends and bottles all products on-site, creating more than 25 distinct labels.
The company is led by Cris Steller, who is also the executive director of the California Artisanal Distillers Guild, a nonprofit organization founded in Sacramento in 2012.
The new restaurant is expected to be open by summer 2025.
